Create a little summer magic with this easy tortellini summer mason jar salad. Combine your choice of tortellini, spinach, bell pepper, white onion, sweet corn, and homemade Italian vinaigrette.

All summer long I try to incorporate sweet corn in to every dish, and salads are an easy answer to that. This salad is a fast lunch option and travels well.
The below picture is in no way illustrating the art of layering this salad. To keep the spinach from being submerged in the Italian vinaigrette for long periods, I would add the ingredient last. I really enjoy the tortellini, veggies, and vinaigrette marinating at the bottom and feel it gives the flavor a bigger punch!
When I make mason jar salads, I do not like to fill the jar completely as I like a little wiggle room to mix the ingredients all together before I transfer into a bigger vessel, like a soup bowl.

Do you need a mason jar to create this salad? No. Does the mason jar make the salad cuter? Absolutely!
I like to mix the salad in the jar first, then transfer to a soup or salad bowl.
The star of this dish hands down is the homemade Italian vinaigrette. I whip this up for any and everything and I enjoy it over most store bought Italian dressings. Check your pantry and fridge, you may be surprised as to how many ingredients you already have to make this easy vinaigrette dressing!

Tortellini Summer Mason Jar Salad
Equipment
- mason jar
Ingredients
- 1 cup three cheese tortellini
- 1 can sweet corn drained
- half white onion chopped
- 1 orange bell pepper
- 3 handfuls of raw spinach
- 1/4 cup Italian vinaigrette (your choice)
Instructions
- Cook tortellini per package directions. Once cooked and cooled, combine with other ingredients in mason jar.
- Layer and combine sweet corn, onion, pepper, spinach, tortellini, and Italian vinaigrette in mason jar. Chill in fridge or enjoy right away!
